A flavourful welcome
The evening begins with three sauces, spicy, medium spicy and non-spicy, served alongside crisp rice crackers. It is a simple introduction, but an effective one, immediately setting the tone for the flavours ahead. A complimentary chicken cake follows, offering another small taste of what Saffron does best.
The appetisers quickly turn up the flavour. Gai Thod Bai Ma-Kroot brings together fried spicy chicken, kaffir leaf and sweet chilli mayo, balancing heat with a creamy sweetness. Goong Thod Takai is particularly enjoyable; minced shrimp is wrapped around fragrant lemongrass, deep-fried and served with spicy and sweet chilli dipping sauces.
Fresh, vibrant and full of character
The salads offer a lighter contrast while keeping the characteristic punch of Thai cuisine. Som Tum Puu Nim pairs crisp soft-shell crab with green papaya salad, while Yum Nua combines spicy marinated grilled beef tenderloin with fresh Thai herbs.
Then comes the Tom Yum Goong, a classic that needs little introduction. Fragrant with lemongrass and galangal, with mushrooms and prawns adding texture, the traditional spicy soup delivers the familiar hot-and-sour character expected from a good Tom Yum.
Mains worth lingering over
For the main course, the Phad Thai Goong Sod gives the classic noodle dish a refined touch, combining wok-tossed rice noodles and prawns with fresh mango, accompanied by banana blossom salad.
The Gaeng Kiew Waan Gai is another highlight. The gently braised chicken green curry comes with apple eggplants and sweet basil, accompanied by crispy fish and salted egg. Rich, aromatic and layered, it showcases the depth of Thai curry without overwhelming the palate.
Rice with a little theatre
One of the evening’s most charming touches comes with the rice service. Rather than simply choosing a variety from a menu, guests are presented with a trolley carrying four options, jasmine, saffron, brown and whole-grain rice, and can select their preferred accompaniment.
It is a small ritual, but one that adds personality to the meal and turns an everyday staple into part of the dining experience.
A refreshing pause
Between the appetisers and mains, a mixed-fruit sorbet arrives as a palate cleanser. Cool, refreshing and light, it provides a welcome pause between the different flavour profiles and prepares the palate for the richer dishes that follow.

Save room for dessert
Dessert keeps things beautifully simple with Khao Niew Mamuang & I-Tim Kati; the classic pairing of mango sticky rice and coconut ice cream. Creamy, sweet and tropical, it makes a fitting finale to a meal that celebrates the many layers of Thai cuisine.
Verdict: Saffron succeeds because it understands that fine dining is about more than what arrives on the plate.
